Fried cauliflower in egg shell

Ingredients for 2 servings:

  • 1 small head of cauliflower (400 g)
  • 1 tbsp oil for frying
  • 50 g lean ham cubes
  • 4 eggs, size M
  • Salt and pepper from the mill
  • 1 pinch of smoked paprika powder
  • 1 tbsp parsley, cut into strips

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Clean and wash the cauliflower, divide it into small florets, and cook in salted water until al dente. Heat oil in a nonstick pan and fry the cauliflower florets and ham cubes for about 5 minutes, turning occasionally. Meanwhile, beat the eggs and season with salt, pepper, and paprika. Pour the eggs over the cauliflower florets and immediately turn them over carefully. Once the eggs are set, remove from the heat, sprinkle with parsley, and serve.
