Ingredients for 4 servings:
- 500 g chanterelles, cleaned – but unwashed!!
- 100 g bacon, streaky, diced
- 1 bunch spring onion(s), finely sliced with as much green as possible
- 40 g herb butter
- 1 bunch parsley, flat, chopped
- little salt
- lots of pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
as a side dish or with black bread or with green ribbon noodles
Melt the herb butter in the pan, brown the bacon for about 1-2 minutes, and sauté the onions over medium heat for about 2-3 minutes. Add the mushrooms over high heat and simmer for about 5 minutes, stirring. Stir in the parsley, add a little salt, and season generously with pepper.
