Ingredients for 4 servings:

  • 500 g chanterelles, cleaned – but unwashed!!
  • 100 g bacon, streaky, diced
  • 1 bunch spring onion(s), finely sliced ​​with as much green as possible
  • 40 g herb butter
  • 1 bunch parsley, flat, chopped
  • little salt
  • lots of pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Melt the herb butter in the pan, brown the bacon for about 1-2 minutes, and sauté the onions over medium heat for about 2-3 minutes. Add the mushrooms over high heat and simmer for about 5 minutes, stirring. Stir in the parsley, add a little salt, and season generously with pepper.
