Fried Eggs on Spinach

The perfect fried eggs on spinach recipe with a picture and simple step-by-step instructions.

Fried eggs:

  • 2 Eggs
  • 1 tbsp Oil
  • 2 big pinches Coarse sea salt from the mill
  • 2 big pinches Colorful pepper from the mill

Spinach:

  • 250 g Spinach / cleaned weighed
  • 2 tbsp Oil
  • 1 Small onion
  • 1 Small red onion
  • 2 Garlic cloves
  • 1 piece Ginger the size of a walnut

Serve:

  • 1 Strawberry for garnish

Fried eggs:

  1. Heat oil (1 tbsp) in a pan, carefully crack open the two eggs and add to the hot oil. Fry for 1-2 minutes, set the temperature low and simmer / fry for 4–5 minutes. Season with coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches).

Spinach:

  1. Clean the spinach, remove the stems, wash well and drain in a colander. Peel and finely dice onions, cloves of garlic and ginger. Heat oil (2 tbsp) in a high pan and fry the onion cubes with the garlic clove cubes and ginger cubes vigorously. Add the spinach and fry until it has collapsed completely. Season with coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches) and continue to fry briefly.

Serve:

  1. Spread the spinach on a plate, place the fried eggs on it and serve garnished with a strawberry
