Fried eggs with tomatoes and bacon

Ingredients for 2 servings:

  • 4 eggs
  • 2 tomatoes
  • 100 g bacon, streaky
  • 1 pinch(s) of cayenne pepper
  • 1 tsp parsley, chopped
  • 1 tsp chives
  • 1 pinch of salt
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Heat oil in a non-stick pan. Slice tomatoes, add to the pan, and sear. Meanwhile, fry bacon strips in another pan until crispy (don’t overcook them—it will become dry and hard). Crack the eggs into the pan over the tomato slices and add them to the pan. Fry over medium heat until a light brown edge forms and the yolk is just set. Sprinkle with salt, cayenne pepper, and chopped herbs, and slide the mixture out of the pan onto two plates. Serve garnished with bacon strips. Goes perfectly with fresh brown bread.
