Fried fish fillet with coconut & basil

Ingredients for 4 servings:

  • 4 fish fillets (redfish, approx. 560 g)
  • 3 tbsp flour
  • 2 tsp oil (sunflower oil)
  • 200 ml coconut milk
  • 2 tsp sambal oelek, hot
  • 2 tsp water
  • 1 tsp cornstarch
  • 8 basil leaves
  • 400g basmati
  • salt and pepper
  • 2 tbsp soy sauce
  • 1 tsp curry

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Season the thawed redfish fillets with salt and pepper and dust with a little flour. Then fry in a pan with a little oil over medium heat. Turn after 5 minutes and fry the other side until golden brown. Remove from the pan, cut into diamond shapes, and keep warm. Add the coconut milk and sambal oelek to the pan and bring to a boil. Thicken with the starch mixed with 2 teaspoons of water. Season with soy sauce, curry, and salt. Arrange the fish fillets on plates, pour the sauce over them, and sprinkle with the finely chopped basil. Prepare the basmati rice according to the package instructions and serve.
