Ingredients for 2 servings:

  • some liver dumplings
  • 1 m.-sized onion(s)
  • Clarified butter or oil for frying
  • 3 eggs
  • 100 ml milk or cream
  • 1 small bunch of parsley, chopped
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Using leftovers with liver dumplings

Slice the liver dumplings and finely dice the onion. Heat clarified butter or oil in a pan and toast the dumpling slices. Add the sliced ​​onion and let it brown. Whisk the milk or cream with the eggs and season with salt and pepper. Pour the egg wash over the baked dumplings and let it set, stirring occasionally until the eggs are cooked. Serve the dish on a platter and sprinkle with chopped parsley. Serve with a salad.
