Fried Maultaschen with lamb's lettuce

Ingredients for 3 servings:

  • 6 large Maultaschen
  • 250 g lamb’s lettuce
  • 2 tomatoes
  • 3 spring onions
  • Mustard
  • Vinegar, possibly balsamic vinegar
  • oil
  • salt and pepper
  • n. B. herbs, fresh
  • Pumpkin seed oil
  • breadcrumbs
  • Butter for frying
  • possibly Parmesan

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Cook the Maultaschen according to the package instructions until almost done; simply remove them two or three minutes before they are cooked and set aside. While the Maultaschen are cooking, wash and trim the lamb’s lettuce, tomatoes, and spring onions. Chop the tomatoes and onions. Pat the Maultaschen dry and cut into strips about 2 cm thick. Fry them in butter in a pan and, when they are brown and crispy, lightly brown a small handful of breadcrumbs. Mix the tomatoes, lamb’s lettuce, and spring onions in a bowl and drizzle with a dressing made from mustard, vinegar, oil, salt, and pepper. Sprinkle with fresh herbs, if desired. Arrange the lettuce and Maultaschen on plates and garnish with pumpkin seed oil. If desired, you can also grate Parmesan cheese over them.
