Fried noodles with vegetables and meat (Asian)

Ingredients for 3 servings:

  • 200 g Chinese egg noodles
  • 2 liters of water
  • 1 tbsp salt
  • 2 tbsp oil
  • 200 g pork or turkey meat
  • 3 spring onions
  • 1 bell pepper(s)
  • 2 carrots
  • ¼ liter of water, hot
  • 1 tsp broth, granulated
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • salt and pepper
  • 2 tbsp oil
  • Soy sauce

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the noodles in boiling salted water according to the package instructions and drain. Fry the meat in a large pan with oil for 3 minutes. Trim and wash the spring onions and cut into 2 cm pieces. Wash the bell pepper, halve, deseed, and cut into strips. Wash, peel, and coarsely grate or thinly slice the carrots. Add the chopped vegetables to the meat in the pan and fry for 2 minutes. Mix the broth, soy sauce, and cornstarch well in a bowl. Once cooked, add to the remaining ingredients in the pan and season to taste. Heat the oil in another pan, add the drained noodles, and fry for about 3 minutes. Then add the vegetable and meat mixture and mix. Transfer to a preheated bowl.
