the perfect fried potato

Here’s my trick 17 – a super trick for super crispy fried potatoes. Peel the potatoes and cut them into slices at least 5 mm thick. Pour water into a pan and arrange the slices on top. Simmer on high until the water disappears. Add lard and oil to the potatoes and fry over medium heat. Taste a slice, and when it’s almost cooked, increase the heat and fry until the potatoes are nicely browned. Then season with salt and serve immediately.
