Fried potatoes with noodles

Ingredients for 6 servings:

  • 2 ½ kg potatoes, waxy
  • 500 g pasta of your choice
  • salt water
  • 6 eggs, beaten
  • 1 large onion(s)
  • oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes

Halve the raw potatoes, cut them into very thin slices and fry them slowly in a pan with the oil until they start to cook. Then add the finely chopped onion (small dice) and continue frying until some of the potatoes are nicely browned and crispy. While the potatoes are frying, you can cook the pasta in salted water as usual. Beat the six eggs with a little salt and pepper and set aside. Now season the fried potatoes with salt and pepper (to taste). As soon as the fried potatoes are done, add the cooked pasta, mix and heat through again. Finally, add the egg, mix immediately and let it set, stirring frequently.
