Fried Prawns Skewers on Carrot-ginger Soup (Tanja Tischewitsch)

  • 3 Pc. Onions
  • 2 Pc. Ginger
  • 1 bunch Lemongrass
  • 500 g Carrots
  • 80 g Butter
  • 100 ml White wine
  • 200 ml Passion fruit juice

  • 500 ml Cream
  • 3 tbsp Cress (garden cress)
  • Salt
  • 12 Pc. Prawns
  • 100 g Sour cream
  • Oil
  1. Finely chop the onions, also the ginger, peel the carrots and cut into small pieces. Then sauté everything in about 80 g butter and deglaze with the white wine. Add a few sticks of lemongrass (and take out later). If lemongrass is not available, freshly squeezed lemon juice can also be used.
  2. Add the remaining ingredients to the pot as well. As soon as the carrots are soft, puree everything with the mixer. If you like, you can also sear a few pieces of chicken as an insert and add it. Then fry the deveined and peeled prawns in hot oil and skewer, fresh lemongrass stalks are also suitable for this. Finally, put a dollop of sour cream on top of the soup and sprinkle with fresh cress.
