Fried snow peas and mushrooms with sweet potato cubes

Ingredients for 2 servings:

  • 100 g snow pea(s), alternatively peas or sugar snap peas
  • 100 g mushrooms, brown
  • 2 large sweet potatoes
  • 1 tbsp soy sauce
  • 1 ½ tbsp water
  • 1 ½ tbsp honey
  • Salt and pepper (herb pepper mix)
  • some oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes

Preheat the oven to 190°C fan/convection oven. Peel the sweet potatoes and cut into small cubes. Brush a suitable baking dish with a little oil, add the potato cubes, and season with a herb and pepper mixture. Do not use salt. Add a little more oil and mix everything together. Bake in the oven for about 20-25 minutes. For the last 5 minutes of baking, you can also use the grill function. In the meantime, thread the snow peas (if necessary) and clean and slice the mushrooms. Mix the soy sauce, water, honey, and herb and pepper mixture together in a small bowl. Heat a little cooking oil in a non-stick pan and fry the sliced ​​mushrooms until the liquid has evaporated. Then add the snow peas, fry briefly, and pour the soy sauce mixture over them. Sauté everything together for about 4-5 minutes. As the vegetables are finished, you need to keep an eye on when the sweet potatoes are done. Finally, add a little salt to both the sweet potatoes and the vegetables and arrange them together on plates.
