Fried stuffed avocado with salad

Ingredients for 1 servings:

  • 1 avocado(s)
  • 2 slices of goat’s cheese
  • 1 egg(s)
  • 3 tbsp flour
  • 5 tbsp panko
  • some oil for frying
  • 100 g salad of your choice
  • 3 tbsp yogurt
  • salt and pepper
  • possibly herbs

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Halve the avocado, remove the pit, and carefully scoop out the flesh from the skin with a spoon. Fill the hollow where the pit was on each avocado half with a slice of goat cheese and set aside. Whisk the egg in a bowl, season with salt, and pepper. Place the flour and panko on separate plates. Carefully coat the avocado halves first in flour, then in the egg, and finally in the panko. Fry them in a hot pan with oil on both sides. After frying, briefly place them on a kitchen towel and let them drain. Wash the lettuce and spin dry. For the sauce, season the yogurt, adding more herbs if desired. Place the lettuce in a bowl and drizzle with the sauce. Serve with the fried avocado.
