Fried tomatoes with tofu

Ingredients for 2 servings:

  • 800 g tomatoes
  • 200 g tofu, plain or smoked
  • 2 m.-sized onion(s), or large
  • Salt
  • pepper
  • Olive oil or vegan margarine for frying
  • e.g. basil
  • n. B. garlic

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

vegan alternative to scrambled eggs with fried tomatoes

Remove the tofu from the packaging and squeeze it dry until no more milky liquid comes out. Then crumble it and fry it in oil until the tofu is golden yellow. Finely chop the onions and fry them in a pan. If you like garlic, you can add it now. Then add the diced tomatoes and fry until no more liquid remains in the pan. Now add the tofu, mix well with the tomatoes, and season with salt and pepper. A little basil also tastes good on the side.
