Ingredients for 6 servings:
- 1.2 kg zucchini
- 3 cloves garlic
- 1 bunch of mint
- 10 tbsp olive oil
- salt and pepper
- 2 tbsp balsamic vinegar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Fry the zucchini pieces in oil for 7-10 minutes until golden brown, deglaze with vinegar, and remove from the pan. Sauté the chopped garlic, add it to the zucchini along with chopped mint, and season. Serve warm or cold.
