Fried zucchini sticks with herb curd

Ingredients for 1 servings:

  • 1 m.-large zucchini
  • 2 eggs
  • 6 tbsp Parmesan
  • salt and pepper
  • oregano
  • Thyme
  • 60 ml herb cream cheese
  • 60 ml quark
  • 30 ml milk
  • 1 tbsp chives
  • some oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Breading without flour

Peel the zucchini, remove the top and bottom ends, and cut into approximately 0.5 cm thick sticks. Beat the eggs and season with salt, pepper, and the spices. Add 6-8 heaped tablespoons of Parmesan cheese and mix well. It should form a thick mixture. Dip the zucchini sticks into the egg mixture, add them directly to the hot oil, and fry until golden brown. Then briefly drain on a paper towel. Mix the cream cheese with the quark and milk. Add the finely chopped chives and season with salt and pepper.
