from pork belly

Wash the pork belly slices under running water and pat dry thoroughly with a cloth. Season generously with salt and pepper, pound them slightly thinly, and coat them in flour. Whisk the eggs in a deep dish and place the pork belly slices in the beaten egg mixture. Then coat them in breadcrumbs, pressing the breadcrumbs down. Heat some fat in a pan and fry the breaded pork belly slices until golden brown. I usually serve it with mashed potatoes and peas and carrots.
