Ingredients for 8 servings:

  • 1 kg minced beef
  • 2 onions
  • 2 cloves garlic
  • 2 rolls
  • 2 eggs
  • 1 chili pepper(s)
  • 2 peppers, green, pickled
  • 1 tsp Dijon mustard
  • 1 tsp paprika paste
  • 2 tsp paprika powder, hot
  • 150 g corn
  • 1 red bell pepper(s)
  • pepper
  • some olive oil
  • possibly spice mix (Mexican mix)
  • 1 onion(s)
  • 2 cloves garlic
  • 400 g tomatoes, chopped
  • 1 tsp paprika paste
  • possibly spice mix (Mexican mix)

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Delicious meatballs with corn and peppers

Meatballs: Soak the bread rolls. Finely chop the onions, chili pepper, chili peppers, and bell peppers, and mince the garlic. Then mix everything with the minced meat in a bowl and season with mustard, paprika paste, paprika powder, pepper, and optionally with 1-2 teaspoons of Mexican seasoning. Then mix the finely chopped bell peppers and corn with the minced meat and form into meatballs. 1 kg of minced meat makes about 20 meatballs. Heat a little oil in a pan and fry the meatballs until they are nicely browned on the outside. Reserve the meatball stock for the sauce. Sauce: Chop the onions, mince the garlic, and fry briefly in the stock left over from frying the meatballs until translucent. Add the chopped tomatoes and bring to a boil. Season with 1 teaspoon of paprika paste and optionally 1/2 teaspoon of Mexican seasoning. Noodles or rice are the best side dishes.
