Frisian tea waffles with plum jam cream

Ingredients for 10 servings:

  • 150 g butter
  • 2 tbsp tea (Frisian tea)
  • 150 g flour
  • 100 g cornstarch
  • 1 tsp baking powder
  • 125 g sugar, fine
  • 3 eggs
  • 250 ml buttermilk
  • 250 ml cream
  • 100 g plum jam
  • 1 tbsp rum

Instructions

Working time approx. 30 minutes; Rest time approx. 50 minutes; Total time approx. 1 hour 20 minutes

and a cup of tea, just good

Melt the butter, stir in the tea, simmer over low heat for 3 minutes, then let it steep for 30 minutes. Sieve the tea butter into a bowl and squeeze out any excess liquid. Beat it with the sugar until very fluffy. Beat in the eggs, one at a time. Mix the flour with the cornstarch and baking powder and gradually stir into the butter mixture, alternating with the buttermilk. Let the batter rest for about 20 minutes. Whip the cream until stiff peaks form, stir the rum into the plum jam, and then gently fold it into the whipped cream. Bake the waffles in batches and serve with the plum cream.
