Ingredients for 24 servings:

  • 750 g apples, peeled and sliced ​​(juicy, not hard variety)
  • 250 g sugar
  • 1 tsp cinnamon
  • ½ tbsp cocoa powder
  • 1 pinch of clove(s), ground
  • 60 ml rum
  • 150 g hazelnuts, roasted and skinned
  • 150 g fig(s), roughly chopped
  • 150 g raisins
  • 150 g candied orange peel, diced
  • 150 g candied lemon peel, diced
  • 150 g apricot(s), dried and diced
  • 500 g flour
  • 1 tbsp baking powder

Instructions

Working time approx. 1 hour 30 minutes; Rest time approx. 12 hours; Total time approx. 13 hours 30 minutes

Combine the sugar, cinnamon, cocoa, and cloves. Mix with the apples, nuts, other dried fruits, and rum and let it sit overnight. The next day, mix in the flour and baking powder and pour into two small loaf pans. Bake at 175°C for 70-80 minutes. Wrap in foil and let it rest in a cool place for at least a few days.
