Fruit cake made from crumb dough

Ingredients for 1 servings:

  • 200 g butter, soft
  • 175 g sugar
  • 1 pinch of salt
  • 1 egg(s)
  • 1 packet of vanilla sugar
  • 400 g flour or
  • 300 g flour and
  • 100 g hazelnuts, ground
  • 2 tsp baking powder
  • 750 g fruit (e.g. apples, plums, cherries, etc.)
  • 2 tbsp breadcrumbs
  • Fat for the mold
  • Flour for the mold
  • Powdered sugar for dusting

Working time approx. 20 minutes; Total time approx. 20 minutes

Grease and flour a springform pan. Preheat the oven to 180°C. Beat the butter, sugar, salt, egg, and vanilla sugar until fluffy. Mix the baking powder with the flour and stir half into the batter. Then add the remaining flour and crumble the batter with your hands. Pour 3/4 of the batter into the springform pan and form a rim. For juicy fruit, sprinkle breadcrumbs over the batter. Cover the base with fruit and sprinkle the remaining crumbs on top. Bake the cake for 45-55 minutes. Let it cool briefly, remove from the pan, and let it cool on a wire rack. Dust with powdered sugar and serve.
