Ingredients for 1 servings:

  • 165 g margarine
  • 165 g sugar, preferably brown
  • 2 eggs, separated
  • 315 g flour, preferably whole grain
  • ½ sachet of baking powder
  • 200 ml milk
  • 1 sachet of vanilla sugar
  • 1 tbsp lemon peel, untreated, grated
  • 1 shot of rum
  • 500 g fruit of your choice and season

Whisk the margarine, sugar, egg yolks, vanilla sugar, lemon zest, and rum until fluffy. Whisk the egg whites until stiff peaks form. Combine the flour and baking powder and fold into the batter alternately with the egg whites and milk. Spread the mixture onto a baking sheet and top with the peeled fruit. Bake at 180°C on the second rack from the bottom for about 45 minutes.
