Ingredients for 4 servings:
- 5 apples, sour, e.g. Boskoop
- 120 g butter
- 60 g sugar
- 1 packet of vanilla sugar
- 1 pinch of salt
- 2 eggs
- 100 g ground almonds
- ½ lemon(s), untreated
- 60 g raisins
- e.g. cinnamon
- Fat for the mold
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Cream the butter with sugar, vanilla sugar, and salt. Separate the eggs and grate the zest from half a lemon. Then stir in the egg yolks, almonds, lemon zest, and cinnamon, if desired. Beat the egg whites until stiff and carefully fold in. Peel and core the apples, and cut them into 2-3 mm thin slices. Arrange them in a greased baking dish in a layered pattern and sprinkle with the raisins. Spread the almond mixture on top. Bake at 180°C for about 20 minutes. Serve with vanilla ice cream, vanilla sauce, or whipped cream.
