Fruit noodles with breadcrumbs

Ingredients for 4 servings:

  • 500 g pasta (wholemeal)
  • Salt
  • 50 g butter
  • 40 g breadcrumbs (wholemeal)
  • 3 tbsp nuts, grated
  • Plum(s), canned or very ripe, soft fruits
  • Peach(s), canned or very ripe, soft fruits
  • 2 tbsp sour cream
  • 2 tbsp crème fraîche

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cook the noodles in plenty of salted water until al dente (if necessary, cover with a clean kitchen towel and store in a colander until ready to eat). In the meantime, melt the fat in a pan and lightly toast the breadcrumbs and nuts. Drain the canned fruit well, wash the fresh fruit, and cut it into wedges. Mix the sour cream with the crème fraîche. Sprinkle the noodles with the breadcrumbs and serve with the fruit and the sour cream and crème fraîche mixture. Tip: Soy cream is also a good alternative to the sour cream and crème fraîche. The fruit noodles will be egg-free if you don’t use egg noodles.
