Peppers – Antipasti

Ingredients for 4 servings:

  • 3 bell peppers, red, yellow and green
  • 2 cloves garlic
  • 50 ml olive oil
  • 3 tbsp lemon juice
  • basil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Wash the peppers, halve them, and remove the cores. Grill them in the oven, slanted side up, until the skin blisters. Let them cool under a damp cloth. Peel off the skin and cut the peppers into wide strips. Mix the marinade together, drizzle it over the peppers, refrigerate, and let it marinate. Serve with feta cheese, olives, and ciabatta.
