Fruit ring made from dried apricots

Ingredients for 4 servings:

  • 250 g apricot(s), dried
  • 1 liter of water
  • 100 g sugar
  • 90 g cornstarch
  • 1 lemon(s), the juice
  • 1 cup of cream

Instructions

Working time approx. 10 minutes; Rest time approx. 12 hours; Cooking/baking time approx. 5 minutes; Total time approx. 12 hours 15 minutes

Soak the dried apricots in water overnight and boil them the next day for about 5 minutes until soft. Then puree thoroughly with a hand blender. Add the sugar and bring back to a boil. Add the cornstarch mixed with a little water and boil for 3 minutes. Add the lemon juice and pour the mixture into a cold, rinsed ring mold and refrigerate. Once set, turn the ring out and fill the center with stiffly whipped, lightly sweetened cream.
