Fruity chicory salad with goat cheese

Ingredients for 4 servings:

  • 250 g chicory
  • 250 g apples
  • 2 mandarin oranges, fresh or from the can
  • 125 g goat cheese
  • 150 g yogurt
  • 1 tsp mustard
  • 1 tsp agave syrup or honey
  • ½ lemon(s), freshly squeezed
  • ½ orange(s), freshly squeezed
  • e.g. salt and pepper

Instructions

Working time approx. 12 minutes; Total time approx. 12 minutes

Wash and thinly slice the chicory. Wash and thinly slice the apples. Peel and dice the mandarins, or drain and finely chop the mandarins. Cut the cheese into thin strips. For the dressing: Mix the yogurt with the mustard, agave syrup, and the juice of the orange and lemon. Season with salt and pepper. Arrange the salad on a plate or in a bowl and drizzle with the dressing.
