Ingredients for 4 servings:

  • 8 Handkäse (farmer’s hand cheese), room temperature
  • 1 large apple, e.g. Pink Lady
  • 4 spring onions
  • 4 gherkins
  • 8 tbsp oil, neutral
  • 4 tbsp apple cider vinegar
  • salt and pepper

Instructions

Working time approx. 10 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 10 minutes

Cut the ingredients into bite-sized pieces and mix with oil, apple cider vinegar, salt, and pepper. Let it sit for about 2-3 hours. Then season to taste. Enjoy with a slice of wood-fired bread with butter and perhaps a glass of cider or beer.
