Fruity light curry noodle salad

Ingredients for 4 servings:

  • 300 g pasta
  • 1 can of corn
  • 2 large bananas
  • 1 small onion(s)
  • 50 g cream cheese
  • 100 g sour cream
  • 1 tsp curry paste, yellow
  • 1 tsp turmeric
  • 4 tbsp soy sauce
  • 1 tsp sugar
  • Salt
  • pepper
  • e.g. coriander leaves, fresh

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook noodles in salted water according to package instructions until al dente. Peel and finely dice the onion. Peel and slice the bananas. Mix the sour cream, cream cheese, curry paste, turmeric (for the yellow color), soy sauce, sugar, pepper, and salt to make a dressing. Combine the dressing, noodles, bananas, onions, and drained corn in a bowl. Mix everything together and let it sit briefly. Serve garnished with fresh cilantro.
