Fruity muesli cookies

Ingredients for 1 servings:

  • 50 g margarine
  • 125 g sugar
  • 1 m.-sized egg(s)
  • ½ tsp salt
  • ½ tsp baking powder
  • 50 g whole wheat flour
  • 175 g oat flakes, preferably whole grain
  • 125 g dried fruit (e.g. figs, apricots, raisins, cranberries)
  • 2 tbsp white sesame seeds
  • Cinnamon powder or vanilla

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Suitable for WW, super tasty and easy, makes 20 cookies

Makes 20 cookies. Mix the margarine and sugar in a bowl until the sugar is almost dissolved. Add the egg and beat until light and creamy. Combine the whole-wheat flour, salt, and baking powder, then stir into the butter and sugar mixture. Finally, mix in the oats, dried fruit, and sesame seeds to create a lumpy dough. If desired, you can flavor the dough with cinnamon or vanilla. Preheat the oven to 180°C (top/bottom heat). Meanwhile, line two baking sheets with baking paper and place small spoonfuls of dough on them. Flatten the cookies slightly with a damp tablespoon. Bake for 15 minutes until light brown. The cookies will keep in an airtight container for about two weeks. These cookies are super quick to make, delicious, and crispy. You can vary them with different dried fruits and flavors. Another variation is to use coconut flakes instead of sesame seeds and add dried pineapple.
