Fruity quark and semolina casserole

Ingredients for 4 servings:

  • Fruit (fresh or from a can or frozen)
  • 3 eggs
  • 125 g sugar
  • 500 g quark
  • ½ pack of baking powder
  • 75 g semolina
  • Fat and breadcrumbs for the form

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Grease a baking dish and dust with breadcrumbs. Place the fruit in the dish, filling half the dish, reserving a small portion for decoration. Separate the eggs and make meringue from the egg whites. Combine the egg yolks with the sugar and beat with a mixer for about 5 minutes until creamy. Then stir the quark into the mixture. Mix the baking powder with the semolina and mix everything with the quark and egg cream. Finally, fold the meringue into the mixture and pour over the fruit. Place the remaining fruit on top and bake in the oven at 200°C for about 40 minutes. This casserole is perfect for using up leftover fruit that is no longer quite so attractive (e.g., apples, bananas, etc.).
