Ingredients for 1 servings:
- 1 chicory
- 1 apple
- 1 grapefruit(s)
- 4 tbsp pomegranate seeds
- e.g. cashew nuts, salted, e.g. 2 tbsp
- e.g. peanuts, salted, e.g. 2 tbsp
- 1 tbsp olive oil or walnut oil
- 2 tbsp balsamic vinegar, lighter
- salt and pepper
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Wash the chicory, remove the stem, and cut the lettuce into bite-sized pieces. Wash and core the apple, then cut it into bite-sized pieces. Peel the grapefruit, remove the skin from each segment, and cut the flesh into pieces. Place the chopped ingredients in a bowl and toss with the vinegar, oil, pomegranate seeds, and nuts. Finally, season the salad with salt and pepper. Use the salt sparingly, as the nuts are already salted!
