Ingredients for 4 servings:
- 1 large slice(s) of watermelon(s)
- 1 large slice(s) Galia melon, or other
- 6 radishes
- 1 bell pepper(s)
- 1 fennel
- 100 g lamb’s lettuce or romaine lettuce
- 6 tomatoes, yellow
- 6 small cherry tomatoes, red
- 1 nectarine(s) or a finger-thick slice of pineapple
- 200 g sheep’s cheese
- 1 bunch of parsley
- e.g. mint
- 150 g yogurt
- ½ lemon(s), squeezed
- 4 tbsp olive oil
- salt and pepper
Instructions
Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes
Cut the melon into approximately 2 cm cubes, slice the radishes very finely, and cut all other ingredients into bite-sized pieces. Chop the parsley, wash the lettuce, and spin dry. Make a dressing from yogurt, lemon juice, oil, and spices and mix with the other ingredients. Let the salad marinate in the refrigerator for about 1/2 hour.
