Fruity summer salad

Ingredients for 4 servings:

  • 1 large slice(s) of watermelon(s)
  • 1 large slice(s) Galia melon, or other
  • 6 radishes
  • 1 bell pepper(s)
  • 1 fennel
  • 100 g lamb’s lettuce or romaine lettuce
  • 6 tomatoes, yellow
  • 6 small cherry tomatoes, red
  • 1 nectarine(s) or a finger-thick slice of pineapple
  • 200 g sheep’s cheese
  • 1 bunch of parsley
  • e.g. mint
  • 150 g yogurt
  • ½ lemon(s), squeezed
  • 4 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 30 minutes; Total time approx. 50 minutes

Cut the melon into approximately 2 cm cubes, slice the radishes very finely, and cut all other ingredients into bite-sized pieces. Chop the parsley, wash the lettuce, and spin dry. Make a dressing from yogurt, lemon juice, oil, and spices and mix with the other ingredients. Let the salad marinate in the refrigerator for about 1/2 hour.
