Ingredients for 4 servings:
- 4 veal escalopes, each 125 g
- 3 tbsp oil
- 3 tbsp butter
- 2 large carrots
- 2 large onions
- 4 slices of cheese or spicy mountain cheese
- 1 bunch of parsley
- 2 tbsp flour
- salt and pepper
- e.g. Aromat or Fondor

Working time approx. 30 minutes; Cooking/baking time approx. 18 minutes; Total time approx. 48 minutes

Lightly pound the steaks and season with salt and pepper. Coat in flour and then fry on one side in a little oil and butter, keeping warm for a while. Add grated raw carrots and finely sliced onions, seasoned with aromatics, to the frying fat. Toss briefly and mix in plenty of chopped parsley. Spread this vegetable mixture evenly on the uncooked side of the steaks and cover with a slice of cheese. Place the prepared meat briefly back in the oven preheated to 180°C (top/bottom heat) until the cheese is slightly melted. Serve with rice, mashed potatoes, fried potatoes or French fries and a variety of salads or vegetables. Tips: You can also top the cheese with 3-4 slices of tomatoes and bake them with the meat; a delicious scrambled egg as a topping is also recommended.
