Fruity tomato salad

Ingredients for 4 servings:

  • 2 lemons, juice
  • 2 vanilla pods
  • 2 onions, red
  • 3 grapefruit(s), pink
  • 8 m.-large tomato(s), ripe and firm
  • 800 g melon(s) (watermelon)
  • 1 tbsp coriander leaves
  • 1 tbsp basil
  • 2 tbsp sugar
  • 5 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring the lemon juice, vanilla seeds, and sugar to a boil in a small saucepan until the sugar dissolves. Let cool, then toss with olive oil and season with salt and pepper. Finely slice the onion, fillet the grapefruit, and dice the tomatoes and watermelon. Mix everything well and toss with the dressing. Finely chop the herbs and fold in. Enjoy with ciabatta and chilled white wine.
