Fruity zucchini salad

Ingredients for 4 servings:

  • 2 m.-large zucchini
  • 1 apple, sour
  • 1 nectarine(s)
  • 1 bunch parsley, finely chopped
  • 1 lemon(s)
  • 1 tbsp agave syrup, maple syrup or honey
  • 2 tbsp olive oil
  • 3 tbsp almond slivers, roasted
  • 5 mint leaves
  • salt and pepper
  • curry

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Total time approx. 40 minutes

Coarsely grate the zucchini, add a little salt, mix well, and let it draw water briefly. In the meantime, core the apple and also coarsely grate it, then cut the nectarine into small cubes. Finely chop the parsley and mint leaves. First, zest the lemon and then squeeze the juice. Drain any excess water from the zucchini, then mix with the apple, nectarine, lemon zest, mint, and parsley. Season with salt and pepper or, for a slightly exotic flavor, a little curry powder. Make a dressing from the lemon juice, agave syrup, and oil and add to the salad. Finally, sprinkle the toasted almond slivers on top. Season to taste and serve.
