Fudgy Brownies with M&Ms

Ingredients for 1 servings:

  • 140 g chocolate, 55% cocoa content
  • 60 g chocolate, 85% cocoa content or higher
  • 115 g butter
  • 3 tbsp cocoa powder
  • 3 eggs
  • 250 g sugar
  • ½ tsp vanilla powder
  • 130 g flour
  • e.g. candy(s) (M&Ms)

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 30 minutes; Total time approx. 2 hours 50 minutes

Place the oven rack in the middle of the oven. Preheat the oven to 175 degrees Celsius (350 degrees Fahrenheit). Double-layer a 20 x 20 cm square baking pan or a small springform pan with parchment paper. The parchment paper should hang over the edges to make it easy to remove the brownies. Melt the butter and chocolate together in a double boiler over medium heat. The double boiler is a heatproof bowl placed in a saucepan containing 5 cm of heated, but not boiling, water. Mix thoroughly, then remove the bowl. Add the cocoa powder, mix well, and let cool slightly. In a mixing bowl, whisk together the eggs, sugar, vanilla, and salt. Add the warm chocolate mixture to the egg mixture and whisk to combine. Add the flour and mix well. Pour the batter into the pan and, if desired, top with M&Ms. Bake for 30-35 minutes. The brownies are done when a toothpick inserted into the pan comes out moist. They shouldn’t be overbaked, so it’s important to check the baking time at the end. If the batter is dry, you’ve overbaked them. Let them cool on a baking sheet for 2 hours. The brownies are easier to slice when they’re cool.
