Ingredients for 25 servings:
- 3 eggs, whisked
- 480 ml milk
- 440 g flour
- 75 g sugar
- ½ tsp salt
- 1 tbsp baking powder
- 1 pinch of cinnamon
- Oil, for frying
- Powdered sugar, sifted, for sprinkling

Mix and sift together the flour, sugar, salt, baking powder, and cinnamon, then add to the egg mixture and beat until smooth. Heat the oil to just under 190°C (in a deep fryer). Pour the batter into the funnel and drop it into the hot fat. From the center, pull it out in a spiral to the edge of the pot, twisting it together a few times so it doesn’t fall apart when turned. Turn after 1.5 minutes, then let it brown for another 1-1.5 minutes. Drain briefly on kitchen paper and sprinkle with powdered sugar.
