Chicken salad with pineapple

Ingredients for 3 servings:

  • ½ chicken (roast chicken), grilled
  • 5 slices of pineapple
  • 2 tbsp pineapple juice from the can
  • 50 g mayonnaise
  • 100 g yogurt (whole milk)
  • 1 small can of mushrooms, drained
  • Salt
  • pepper, black
  • curry powder

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Skin and debone the chicken. Cut the meat into approximately 1/2-cm cubes. Cut the pineapple into even pieces. Blend the mayonnaise, yogurt, and pineapple juice until smooth and season with spices. Now fold in the pineapple and diced chicken and season again. Cover and refrigerate for about 1 hour before serving.
