Ingredients for 6 servings:
- 6 egg yolks
- 250 g sugar
- 4 cl water
- 900 g cream
- 1 packet of vanilla sugar
- 100 g raspberries, pureed
- 100 g chocolate, melted
Instructions
Working time approx. 30 minutes; Rest time approx. 4 hours; Total time approx. 4 hours 30 minutes
Whisk the egg yolks, sugar, and water until frothy. Fold in 900g of very stiffly whipped cream. Divide the mixture into 3 equal portions. Stir one sachet of vanilla sugar into mixture 1. Stir 100g of pureed raspberries into mixture 2. Stir 100g of melted chocolate into mixture 3. Carefully pile all the mixtures on top of each other in a suitable baking dish and freeze for at least 4 hours. Line the dish with cling film to make it easier to remove the ice cream parfait from the dish.
