Ingredients for 1 servings:

  • 2 eggs
  • 50 g sugar
  • 1 packet of vanilla sugar
  • 250 g flour
  • 1 packet of baking powder
  • 250 g low-fat curd cheese
  • 100 ml water
  • possibly rum
  • 100 g raisins or sultanas
  • Fat for frying
  • cinnamon sugar

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

North Frisian recipe

Beat the eggs, sugar, and vanilla sugar until frothy. Combine the flour and baking powder and mix into the sugar/egg mixture. Add the water and quark. Mix everything thoroughly and for a long time. Add a little more water if necessary. The batter shouldn’t be too thick so that the Futjes are nice and fluffy. If you like, you can also add a dash of rum. Finally, stir in the raisins. Heat the deep fryer to 175°C. Using a large tablespoon, add the batter to the oil. If necessary, scrape off the batter with a second tablespoon. Leave in the oil until they are nicely browned, turning occasionally. Mix the sugar and cinnamon together and toss the Futjes in the oil while they are still warm. They taste best when eaten warm. Makes about 12 Futjes.
