Ingredients for 2 servings:

  • 1 m.-sized onion(s)
  • 100 g cooked ham
  • 100 g leek
  • 4 garlic cloves
  • 5 g clarified butter
  • 1 tbsp port wine
  • 1 m.-sized egg(s)
  • n. B. Salt and pepper from the mill
  • 30 g cheese, grated, e.g. Emmental
  • 2 small slices of farmhouse bread
  • 10 g butter

Preheat the oven to 220 degrees fan-assisted. Chop the onion and dice the cooked ham. Halve the leek lengthwise, wash it, and cut it crosswise into fine strips. Dice the garlic cloves and crush them with a knife. Sauté the diced onion in the clarified butter until translucent, then add the cooked ham. As soon as the onions begin to brown, add the leek and garlic and sauté while stirring. Deglaze with a tablespoon of port wine and simmer over low heat for about 3 minutes, stirring constantly. Season generously with salt and pepper and, if desired, add a pinch of ground caraway seeds. Let the mixture cool for 5 minutes, then stir in the beaten egg and 15g of grated cheese. The egg should not set. Brush one side of the bread slices with butter and place, butter-side down, in a non-stick baking dish. Spread the mixture onto the bread and press down lightly. Sprinkle with the remaining grated cheese and bake in the oven for about 10 minutes. Garnish to taste and serve immediately.
