Tapas
Cut the chorizo into 1 cm thick slices. Cut the bread, including the crust, into 1 cm cubes. Generously coat the bottom of a cast-iron pan (a regular frying pan will do) with olive oil. Heat the oil, add the garlic, and brown lightly for 30-60 seconds. Add the bread cubes to the pan and fry, stirring constantly, until crispy and golden brown. Add the chorizo slices and heat for 1-2 minutes. Remove the bread and chorizo from the pan with a slotted spoon and drain on kitchen paper. Place the bread, chorizo, and parsley in a warmed bowl and stir to combine. Sprinkle with paprika and serve warm. Serve with cocktail sticks and eat each time you eat a piece of sausage and a cube of bread together.
