Garlic chicken in tomato sauce

Ingredients for 4 servings:

  • 8 chicken legs
  • 3 onions
  • 6 garlic cloves
  • 2 can/n tomatoes, pureed or pizza tomatoes
  • ¼ liter red wine
  • chili powder
  • Seasoning mix for chicken (alternatively salt and pepper)
  • 2 baguettes (herb butter baguette)
  • Margarine for frying

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

First, wash and pat dry the chicken thighs, then rub them thoroughly with the chicken seasoning mix. Heat enough margarine in a pan and fry the thighs evenly until crispy. In the meantime, peel and dice the onion, and peel and press the garlic. Remove the chicken pieces from the pan. Add the onion and fry. Add the garlic shortly before the end. It should braise briefly, but not become browned, as otherwise it will become bitter and the flavor will be lost. Place the passata or pizza tomatoes in a baking dish, season with chili powder, and add the red wine (you can add more seasoning if desired, depending on how spicy you like it). Preheat the oven to 180°C (fan oven). Stir the roasted onions and garlic into the tomatoes, then place the chicken pieces in the sauce and coat with it. Place the whole thing in the oven and continue cooking for about 30-45 minutes. Ten minutes before the end of the baking time, it’s a good idea to bake the baguette on the lower shelf (it’s perfect for dipping the sauce). Serve with a glass of red wine; the baguette makes any other accompaniments unnecessary. Tip: If you have any leftover sauce, you can freeze it and use it as a topping for (homemade) pizza at some point. It tastes amazing.
