Garlic-date carrots

Ingredients for 4 servings:

  • 700 g bunched carrots
  • 1 onion(s), red
  • some salt
  • ½ tsp sugar
  • 100 g garlic butter
  • 50 g soft dates, pitted
  • 1 bunch parsley, flat
  • some black pepper from the mill
  • 1 tsp lemon zest

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

As a side dish to grilled steaks, minced steaks or fish

Clean, peel, and rinse the carrots, then halve lengthwise and cut into pieces. Peel and finely dice the onion. Gently heat both in a saucepan with 100 ml water, a pinch of salt, the sugar, and the garlic butter, then sauté for about 12 minutes. Slice the dates. Rinse the parsley, shake dry, and chop the leaves. Add both to the carrots and heat briefly. Season to taste with a little salt, a few grinds of freshly ground black pepper, and the lemon zest.
