Garlic spaghetti with crab or crab tails

Ingredients for 4 servings:

  • 500g spaghetti
  • 6 garlic cloves
  • 250 g crabs or crab tails
  • 5 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp parsley, chopped
  • 1 tbsp basil, chopped
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the spaghetti al dente, then drain (do not rinse with water, otherwise the starch will dissolve and the sauce will not be absorbed as well). Reserve a cup of the pasta water. Peel the garlic and finely chop it or press it through a garlic press. Gently heat the oil and butter with the garlic in a saucepan. Be careful that the garlic does not brown, or it will become bitter. Add the crab or crayfish tails and sauté. Add the spaghetti and pour in the reserved pasta water. Mix in the parsley and basil and toss everything together. Add salt and pepper to taste. Serve with a fresh salad. Tip: It’s best to eat in pairs, otherwise the garlic smell can be hard to bear.
