Ingredients
- 500 g Gnocchi - best from the fresh food counter -
- 1 tbsp Olive oil
- 500 g Cocktail tomatoes e.g. mixed red / yellow
- 250 ml Mayonnaise -light-reduced fat or salad dressing
- 150 g Mini mozzarella balls
- 1 pot Basil
- Salt, pepper and mozzarella seasoning salt
Instructions
- Fry the gnocchi in olive oil and continue frying for about 5 minutes over medium heat, turning every now and then. Halve the cocktail tomatoes and mozzarella balls and mix with the gnocchi. Now fold in the mayonnaise and season with salt, pepper or mozzarella seasoning. Let the lettuce steep for about half an hour before eating. Fresh baguette goes well with it ... but doesn't have to be 🙂
