Summer Gnocchi Salad

Ingredients
 

  • 1,5 Pc. Paprika
  • 2 tbsp Olive oil
  • 500 g Gnocchi
  • 1 pinch Sugar
  • 1 tbsp Balsamic vinegar
  • 1 Pc. Orange
  • Salt
  • Pepper
  • 100 g Grapes
  • 2 tbsp Chopped basil
  • 20 g Walnuts
  • 65 g Feta
  • 75 g Arugula

Instructions
 

  • Cut the paprika into narrow strips and pour 1 tablespoon of olive oil over them. Season with salt and pepper and grill in the oven for 5-8 minutes at 200 degrees.
  • Let the Gnocchi soak in plenty of salted water according to the instructions on the packet.
  • In a bowl, mix 1 tablespoon of olive oil, 1 pinch of sugar, balsamic vinegar, juice of half an orange, 1 pinch of salt and pepper together to make a dressing.
  • Quarter the grapes, chop the basil and walnuts, cut the feta into small cubes, fillet half an orange, wash and clean the rocket.
  • Mix the cooled gnocchi, bell peppers and other ingredients with the dressing.
