Giant beans in spicy tomato sauce

Ingredients for 6 servings:

  • 500 g beans, large white, dried
  • 1 bunch of soup vegetables
  • 1 can/n tomatoes, peeled
  • ½ liter meat broth or vegetable broth
  • 2 cloves garlic
  • ½ cup(s) oil (olive oil)
  • 2 onions
  • salt and pepper
  • oregano
  • Sugar

Working time approx. 15 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 15 minutes

Gigantes

Soak the beans in water overnight (a pinch of baking soda in the soaking water makes the beans more digestible). Dice the soup vegetables, finely chop the onions and garlic, and puree the tomatoes. Sauté the onions and garlic in olive oil, add the soup vegetables, pureed tomatoes, and meat stock. Simmer in a covered pan for about 1 1/2 hours, until the beans are tender. If there is too much liquid in the pan, reduce it a little in an uncovered pan until a thick tomato sauce forms. Season to taste with salt, pepper, a pinch of sugar, and oregano. Tastes good lukewarm as a starter or as a main course, for example with rice.
